VEGETARIAN – How did I get here?

In the beginning . . .

I fell head over heels in love!

{This is a true story}

My darling Todd walked into my life with a strong desire to “BE HEALTHY”. Upon visiting the beach in late November we had the pleasure of meeting a “vegetarian/vegan family” of three. {Little did I realize this until after feeding the 7 year old boy of the family McDonald’s Chicken Nuggets} I would say quite a treat for a vegetarian child, would you say?

This family had a great impact on us. They were living in a cottage on the beach, living life, and most of all living their passion! Don’t we all strive to live our passion in life?

My sweet darling Todd {if you read some of my blogs you will believe this is his given name} ask me (shortly after asking me to marry him} about us trying out being a vegetarian.  As with the marriage proposal, I said YES! So the journey begun. . .

Returning home on the day before Thanksgiving, I strived (as did Todd) do be as vegetarian as humanly possible for a novice vetegarian for Thanksgiving dinner.  Now, I take my commetments seriously!

A month later into this health purpose decision, my darling Todd does not feel “quite up to par” and credits this to lack of the off limits MEAT and the nutrients he receives from the said MEATS. Yes, he at that point decides for the sake of his health he should NOT be a VEGETARIAN! Okay, point taken. By the way, his “not to par” feeling had nothing to do with MEAT!

Fast forward the clock to today, March 23, 2011. I have not eaten any meat! A few animal by-products (skim milk, eggs, cheese) yes, but not MEAT! As I type this I am cooking the classic “yard bird” (a/k/a chicken) for my NON-vegetarian son and sweet darling Todd. How ironic is that? A vegetarian cooking chicken for the ones she loves more than life itself!

Being a vegetarian has lowered all my cholestrol and CRP counts! I want to say thank you Todd for helping me in improving my health and extending my life! I say this with love!

Life has its twist and turns, this is just one of my many! Two thumbs up for the vegetarians out there cooking for NON-Vegetarians! {I say this as I cook MY fried rice before adding the BACON for the ones I love!)
