Thin Mint Brownies [without the Thin Mints]

Just in case you have run out of the Girl Scout Thin Mint Cookies, these are a good spin-off! The great thing about these are they are easy and are staples of the kitchen {smile} my kitchen anyway!

Here are the ingredients:

Brownie Mix (& of course the eggs and stuff it calls for)

For the Icing:
3 Tablespoons of Cocoa
1 Cup of Sugar
1 stick of butter
1/4 cup of water (or milk)
Few drops of Peppermint flavoring (I get the concentrated stuff)

Bake the brownies per the box intructions

Put all the icing ingredients in a pan and melt on the stove, stirring often. When it reaches a boil, continue to stir and boil for 5 minutes. Pour over brownies. Let cool till the icing firms up a bit. Cut and serve!

If you like Thin Mints, you will like these. The amount of flavoring you put in is to your taste. It doesn’t take much!
