Stuffed Peppers VEGETARIAN Style

This is a great Vegetarian version of stuffed peppers. My darling Todd (the drop-out Vegetarian) said, “Hey, this is good, I could eat this way” I think that Vegetarians in a meat-eating household could pull this one off {meatless}!

(1) Bell Peppers (halved and chopped (2) chopped onions (3) Spinach (I like to add this to everything possible) (4) Whole grain rice (cooked) (5) can diced tomatoes (6) black beans (7) Salt, pepper and garlic (8) shredded cheese (9) Flax Seed (I add every time I can (10) tomato paste (sauce)

I did not measure, there is no exact, the size of the bowls will give the ratio needed.

Step #1:

Clean your whole peppers and boil for 15 minutes (this quickens the cooking process).

Step #2:

Saute the chopped peppers, onions, salt, pepper and garlic. Just as they get tender add the spinach. Then, add the black beans and tomatoes.

Step #3:

Add tomato paste  and flax seed. Simmer for 5 minutes.

Step #4:

Add rice. Mix throughly. Remove from heat and stir in cheese. Your filling is ready.

Step #5:

Fill peppers with filling, sprinkle with cheese and bake at 350 degrees for 15 – 20 minutes. Garnish with a touch of pasta sauce.
