{Polly’s} Cool Whip Caramel Pie

{Polly’s} Cool Whip Caramel Pie

INGREDIENTS:

1/4 Cup Oleo or Butter

1/2 Cup Chopped Pecans

1  8oz. Cream Cheese

1  Can Eagle Brand Milk

1  12oz. Caramel Ice Cream Topping

1  16oz. Cool Whip

2  Graham Cracker Crusts

STEP ONE:

Melt butter in skillet, add pecans, cook until brown, set aside.

STEP TWO:

Blend together cream cheese and Eagle brand milk until smooth.

STEP THREE:

FOLD Cool whip into cream cheese mixture.

STEP FOUR:

Layer 1/4 cream cheese mixture into each pie crust.  Drizzle caramel on each and 1/4 of pecans on each.

STEP FIVE:

Repeat layers.

STEP SIX:

Cover with lids from pie crust.

STEP SEVEN:

Place in freezer overnight until firm.

To serve, remove from freezer and let stand for 5 minutes before cutting.  Slice and serve! You may drizzle a little more caramel on if desired.

This makes two pies and may be kept in the freezer for 1-2 months. It is a great pie to keep on hand for drop-in company! I named it {Polly’s} because that was the sweet ladies’ name that introduced this scrumptious pie to me!

I made this with low fat/no fat and low calorie ingredients so I do not feel guilty {since when have I felt guilty about eating sweets}!
