EASY Onion Soup

Posted by becky on April 3, 2011 in Vegetarian |

I am all about utilizing left overs. This morning I was the only one eating gravy for breakfast = lots of leftover gravy. I took a spin on a recipe I had read, turning the left over gravy, an onion ready to sprout and a few other staples into this soup!

This is what I started with, the left-over gravy (homemade or instant will work) and an onion sliced up.

I cooked the onion in a few drops of olive oil until tender.

Then, I added the ready-made gravy, a cup or so of water (careful the water will thin the soup too much); Worcheshire Sauce: black pepper; garlic. I brought this to a boil and let it simmer for 7 -10 minutes. I sprinkled it with grated cheese.

Oh, by the way I had these hamburger buns about to go stale, so I toasted them and ate them with the soup. Yummy lunch, that’s easy {and used those left-overs}.
