Chocolate Pie with a Peanut Butter layer in the bottom. Delicious!
1 Cup Sugar
3 egg yolks
5 Tablespoons Self-rising Flour
2 Cups Milk
3 Tablespoons of Cocoa
1/2 Stick Butter
1 teaspoon Vanilla
2 Tablespoons of Peanut Butter
1/3 Cup of Powered Sugar, more or less
Graham Cracker Pie Crust
First, prepare pie crust. MIX peanut butter and powered sugar together. Will be coarse crumbles. Mix powered sugar until the mixture is not sticky. Press the peanut butter mixture into the bottom of the pie crust. Reserve 1 teaspoon for garnish. Set aside.
MIX FIRST FIVE INGREDIENTS (be sure to separate egg whites and place in separate bowl). Cook the first five ingredients on medium heat until thick. Your grandmother might have told you to cook something like this in a double boiler, that is just too slow for me. I just cook in a regular pan right on the burner. The secret to this is to stir continuously! Now, after the ingredients have thickened, remove from heat and add butter and vanilla. Stir well and pour into prepared pie crust.
Beat egg whites adding a teaspoon of sugar while beating. Put on top of pie and sprinkle with reserved peanut butter mixture for garnish. Place pie in 350 degree heated oven for approximately 5-7 minutes to brown meringue.
Some like HOT, some like COLD! Either way it is just plain GOOD!
